Principle:
(α-galactosidase)
(1) Raffinose + stachyose + verbascose + H₂O → D-galactose +
sucrose

(galactose mutarotase)
(2) α-D-Galactose ↔ β-D-galactose

(β-galactose dehydrogenase)
(3) β-D-Galactose + NAD⁺ → D-galactonic acid + NADH + H⁺
